Frozen Berry Pancakes

If you have a berry obsessed baby like I do, they are going to love these frozen berry pancakes!

Baby led weaning recipe frozen berry pancakes

They might not be the prettiest recipe, but trust me your baby will love them. Also, babies don’t care about food presentation 😂 toddlers, maybe, but we can work on that skill for when the time comes.

This is a super affordable and quick recipe! Sugar free, sweetened just with berries. And yes, in pancake form, because that is my go-to. Easy for him to grab and easy to prep in advance. Always trying to find more ways for my son to eat eggs, and so far pancakes are a big win, so I’ll keep making them and trying new flavors to add into them!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the pancakes. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Half pancakes or strips would work well here. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe contains flour and egg.

GF flour should work here. Baby oatmeal will likely work here as well, although I do find that to be wetter, so you might need to add more, or it might just be a softer pancake.

I have tried making these egg free and did 2 tbsp full fat greek yogurt plus 1 tbsp water. It’s a softer batter. I would suggest holding off on adding water until you add in the yogurt and see what the texture of the batter is like, you don’t want it to be too runny. The pancakes will be softer inside, but still delicious!

I plan to test them again with an actual egg replacement, and will update here when I do. If you’d like to try, here’s one that has good reviews and is available online.

STORAGE

I would store these in the fridge for 4 days max, then transfer to the freezer. Freeze in a single layer, I typically will place on a baking sheet with parchment paper, and once frozen transfer to another container or ziplock bag. If you freeze altogether it’s impossible to separate, this makes it easy.

To reheat I put in the toaster oven until warm, but you could also do the microwave. If you’re doing the egg free version I’d do the toaster oven.

SUBSTITUTES & ADD INS

Any frozen fruit here will work! Some might not mash well, so you might need to chop/cut up to make them safe for baby.

You also could do fresh berries, but might need to add a tablespoon or two of milk to the batter since I find frozen berries to be much juicier.

If your batter seems too wet, add in more flour.

Someone mentioned their berries were too sour for their little one, so they mixed in a date to add in some sweetness.

TOOLS USED/RECOMMENDED

Frozen Berry Pancakes

An easy recipe for all the berry obsessed babies out there!

Ingredients

  • 1 cup frozen berries
  • 1/4 cup all purpose flour
  • 1 egg
  • 1/2 tsp baking powder

Instructions

  • Preheat your skilled on medium low
  • Add your berries to a bowl and thaw in the microwave for 1-2 minutes
  • Remove and mash them up with a fork
  • Add in the rest of your ingredients and mix until combined
  • Grease your skillet, we use avocado oil, but use oil/fat of choice
  • Add 1 tablespoon of batter and cook on both sides
  • Serve and enjoy!
