These broccoli corn fritters were an experiment gone RIGHT and I’m super excited to share them with y’all!

My husband made a way too big batch of steamed broccoli and we had a ton of leftover, so of course I had to get to work experimenting! We had a can of corn so I decided to pulse them together in my mini food processor and BOOM one of my son’s favorite recipes of mine was born.
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the fritters. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Strips would work well here. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS
This recipe contains egg and flour.
I haven’t tried without egg. If you’d like to try, here’s one that has good reviews and is available online.
STORAGE
I would store these in the fridge for 4 days max, then transferred to the freezer. Freeze in a single layer, I typically will place on a baking sheet with parchment paper, and once frozen transfer to another container or ziplock bag. If you freeze altogether it’s impossible to separate, this makes it easy.
To reheat I put in the toaster oven until warm, but you could also do the microwave. I think they turn out better when reheated in the toaster oven personally!

Small spatula – I find these easiest to use when flipping small pancakes or other small fritters for baby
Steamer/Pasta Pot – We use this all the time. Has a steamer and pasta insert. This isn’t the exact one we have, but probably should switch to it because it’s stainless steel.
Mini Food Chopper – I have been using this a TON when making food for my son. So easy, the charge lasts for a while, and I love being cordless. Plus, it washes up in the dishwasher. Love it! A blender or bigger food processor would work here just as well. I tried to just use a masher and it didn’t work.
Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)

Broccoli Corn Fritters
Ingredients
- 1 cup steamed broccoli
- 1 cup canned corn
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/3 cup all purpose flour
- 1 egg
Instructions
- Steam your broccoli
- To your food processor add your steamed broccoli and corn and pulse until all chopped
- Add the mixture to your mixing bowl
- Add in your remaining ingredients and mix until combined
- Using a tablespoon or cookie scoop add around 1 tbsp of batter to a hot greased skillet and flatten slightly with spoon/scoop or a fork
- Cook for a few minutes until edges start to brown
- Flip and cook on the other side
- Serve and enjoy!

Can you replace all purpose flour with oat flour?
Hi! Yes, you can. However it’s not a 1:1 conversion. I found this on how to convert: “To replace 1 cup of all-purpose flour, you’ll need to multiply that by 1.4 to get a similar weight of oat flour. For example, if a cookie recipe calls for 1 1/4 cups of all-purpose flour, you’ll need to multiply that by 1.4 to get the correct amount of oat flour to use.” Hope that helps.
