17 Gestational Diabetes Lunch Ideas You’ll Genuinely Crave

Let’s be honest, thinking of gestational diabetes lunch ideas (or any meal ideas…) can be a challenge. Food burnout is SO so real when you have GD! Not to worry, we’re giving you tons of ideas to try out next time lunch hits!

Gestational Diabetes Lunch Ideas

When I had gestational diabetes, I was always on the hunt for new meal ideas. It’s so easy to get stuck in a rut of foods or meals you know are safe and not going to spike you. We need variation! Here’s a list I had going in my phone of meals I could try out whenever I was in need of mixing things up.

Reddit and this Facebook group were my absolute SAVIORS when I had GD, and I got tons and tons of ideas. All of the ones below are from there! They were the ones that sounded the best to me and so I had them saved, but I highly recommend joining that group and searching around Reddit if you need more ideas. For Reddit, just search on Google “gestational diabetes lunch ideas reddit” and you’ll get tons of threads.

This post is all about gestational diabetes lunch ideas.

1. Quesadillas in the air fryer using rotisserie chicken, cheese, bbq sauce and plant based protein wraps. Note: be mindful of sugar in bbq sauce, perhaps use a low/no sugar variety.

2. Jalapeño and cheddar sausage with green beans and mini potatoes (or insert carb/vegetable here).

3. Small can of tuna fish as tuna salad with a little avocado oil base mayo, some cucumber and tomato on a slice of whole wheat bread.

4. A can of soup and protein shake.

5. Chicken breast or turkey wraps with mayo mustard cheese and sometimes I add in Italian dressing for extra carbs paired with protein shake.

6. Protein shake and 2 Oikos triple zero yogurts.

7. Pizza with cauliflower pizza thins. Note: be mindful of sugar in pizza sauce. Works as a wrap too with a low carb wrap, or quesadilla.

8. Salad with chicken, half avocado, serving of sour cream, salsa, and a couple tortilla chips crumbled on top.

9. Buffalo chicken strips in a low carb tortilla with cheese, lettuce and ranch.

10. Low carb wrap with meat, veggie, cheese, and sauce. Examples: blackened chicken, veggies of choice, feta and tzatziki sauce. Taco meat (ground beef or turkey with taco seasoning), veggies of choice, taco cheese and guac. Pulled pork, shredded cheddar, pickled onions, any other veggies, low/no sugar bbq sauce. Sliced Turkey, bacon, tomatoes, lettuce and mayo.

11. Whole wheat Carb Balance tortilla quesadilla (deli ham or frozen grilled chicken pieces in it with cheese), an apple with natural PB and semi sweet or dark chocolate chips, protein shake on the side.

12. Carb balance whole wheat tortilla, slice of pepper jack cheese, lettuce, and chicken salad. Cottage cheese and grapes on the side.

13. Whole wheat carb balance fajita tortillas, chopped pepperoni, salami, turkey, lettuce, tomato, onion, and banana peppers, shredded cheese, Italian seasoning, black pepper, splash of banana pepper juice, splash of red wine vinegar, splash of olive oil, mix w/a little bit of mayo.

14. Leftover steak sliced and re-seared with some green peppers paired with a super simple homemade tomato bisque (tomatoes roasted with garlic, salt, and pepper then puréed with some heavy whipping cream and warmed up).

15. Grilled cheese every day for lunch with carrots and dip, berries, pistachios, and chickpea puffs.

16. Cottage cheese with avocado slices/cubes, cherry tomatoes, any extra protein you love (tuna, chicken, turkey). Season with salt and pepper, top with olive oil and balsamic vinegar. You could also add some seeds. Enjoy with a whole wheat toast.

17. Two slices of the thin Dave’s Killer bread, goat cheese, avocado, and diced up chicken breast. Some assorted sides like pickle, sliced bell peppers, strawberries, whatever is on hand and seems good that day.
