These peanut butter chocolate chip oat cups are such a perfect little snack to keep on hand!

These are SO yummy! If you like peanut butter you will love these. Hearty thanks to the protein + fiber from the oats, slightly sweet from the chocolate chips and maple, and quick to make. These were a hit with our whole family!

This is my silicone mini muffin tray that I use ALL the time. Metal reinforced so it’s not all floppy in the oven and dishwasher safe. LOVE this thing!

Peanut Butter Chocolate Chip Oat Cups

Prep Time:5 minutes mins
Cook Time:15 minutes mins
Servings: 24

Ingredients

  • 1½ cups oats
  • ½ cup peanut butter
  • ¼ cup maple syrup or honey
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup chocolate chips

Instructions

  • Preheat oven to 350°F and grease a mini muffin pan
  • Mix everything together in one bowl
  • Scoop into mini muffin cups (about ¾ full)
  • Lightly press down to shape
  • Bake 10–12 minutes, until set
  • Let cool 10–15 minutes before removing (they firm up as they sit)

    What type of peanut butter do you recommend?

      I used no sugar added Jif! All natural might make the batter too wet since those tend to be more liquidy.

    Very excited to try these but I don’t have a mini muffin pan. Do you think I could put them in small clusters on parchment paper?

      Good question. I think that could work! I also think if you have a regular muffin pan you could do a thin layer on the bottom of that and just adjust the bake time since they’ll be thinner. Either way, the batter is thick so it will hold it’s shape if you try clusters. LMK how it turns out!
