Cheesy Carrot Waffle

This cheesy carrot waffle is super simple to make and is a veggie packed recipe for little ones!

This recipe checks all the boxes – simple, veggies, protein, and toddler approved. What more could you want?! The waffle iron gives it yummy crispy edges! My son liked this dipped in ketchup.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe has eggs and dairy.

If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.

STORAGE

I stored these in the fridge for 4 days, then transferred to the freezer. They can stay in the freezer for 2-3 months.

To freeze I would line a baking sheet with foil or parchment then lay in a single layer and place in the freezer. Once frozen (give it a few hours) you can transfer to another container. This way they are individually frozen rather than all stuck together in one huge block!

To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen. Best reheated in the toaster!

SUBSTITUTES & ADD INS

Feel free to add in any spices your little one likes! Any cheese will work here as well.

TOOLS USED/RECOMMENDED

Waffle iron – I use this mini one. Has removable plates so it’s super easy to clean!

Box grater – I use this often to grate apple, zucchini, cheese, carrots, and more!

Cheesy Carrot Waffle

Super simple healthy recipe your toddler will love!

Cook Time:5 minutes mins
Servings: 2

Ingredients

  • 1 large carrot peeled and grated
  • 1 egg
  • 1/4 cup shredded cheddar cheese
  • 1/4 tsp garlic powder
  • Cooking spray for the waffle iron

Instructions

  • Plug in your waffle iron to preheat
  • Peel and grate your carrot into a bowl
  • To the same bowl add your cheese, egg, and garlic powder
  • Mix until all is combined
  • Spray your waffle iron with cooking spray
  • Add around half the mixture to your preheated waffle iron and cook for 5 minutes or so, until cooked through and browned slightly
  • Remove, then add remaining mixture and cook
  • Cool waffles slightly then serve

    So easy and delicious! I added 2 tbsp of flour to make it more like a fritter. My 9mo loved it so much. Will definitely make this again ๐Ÿ™‚

    Can you use pre shredded carrot they sell in bags or is that too dry?
