Feeling suck in a rut for dinner? These gestational diabetes dinner ideas will give you some fun and delicious ways to mix things up!
Dinners were always hardest for me when pregnant, even without gestational diabetes! I just felt so burnt out on eating. But then add in gd and having to eat a specific way, they were a challenge on a regular basis. I had to have a list going of gestational diabetes dinner ideas going so I could at least remove the coming up with ideas aspect of the process!
Sharing below some of my regular dinners along with some others that I had saved in my notes but had yet to try. I hope you find some fresh ideas in here!

1. Crockpot BBQ chicken with SF sauce
2. Spaghetti with meat sauce and protein pasta (combine ground meat with jarred sauce – watch for sugar)
3. Egg rolls in a bowl – recipe
4. White chicken enchiladas – recipe
5. Cheesy taco ground beef & cauliflower rice – recipe
6. Salad kit with grilled chicken strips, add veggies, wrapped in a low carb tortilla
7. Sauté onion, bell pepper, tomato, mushroom, chicken, garlic in a skillet, and then add an egg and 1/4 of a portion of whole grain rice
8. Bell pepper nachos
9. Chicken veggie skillet – recipe
10. Cajun cauliflower rice – recipe
11. Grilled cheese on low carb or whole grain bread and soup
12. Costco meatballs (any premade meatballs), Banza pasta, Raos alfredo, and broccoli
13. Birds Eye cheddar broccoli back with protein pasta
14. Chili with toppings
15. Two tacos with extra meat, cheese, and veggies
16. Chicken salad with red onions, celery, diced pickles in a low carb wrap with cheese and lettuce
17. Mississippi roast (recipe) over cauliflower rice or with half a baked potato
18. Cut up kielbasa, broccoli and onion baked in a foil packs with a little bit of oil or butter, seasonings of choice, and cheese. Baked at 350 for 20-30 minutes
